Video: Alinea Chefs Create Lamb Dish With 86 Components

A new course is being served at Grant Achatz's Alinea restaurant in Chicago that consists of 86 different components. The dish is called "Lamb 86."

This video shows the painstaking prep by the chefs who wear gloves and wield tools and ingredients with a surgeon's precision. The lamb is served on a plate. The components are served on a separate glass presentation plate. Each component is made to tasted with the lamb, and provides a different flavor experience.

It's complicated. It's beautiful. It's like performance art in a restaurant.
