Chef David Chang Challenges Jimmy Fallon to a Spicy Chicken Wing Eating Contest

Momofuku Chef David Chang was a guest on The Tonight Show Starring Jimmy Fallon to announce the opening of his new restaurant in Washington, D.C.
The menu has not been set yet, but Christina Tosi, the founder and chef of Momofuku Milk Bar, the dessert branch of Chang's Momofuku Restaurant Group, is working with Chang on the new venture. She will bring her amazing dessert skills to the new restaurant, including her classics "Cereal Milk," her amazing cookies and her "Crack Pie." The restaurant will be a Milk Bar, but will feature some new surprises.
Chef Chang also announced that Chef Tosi has created a new cookie in honor of their 10th anniversary. The new cookie is called Lucky Peaches and Cream and is sold at Milk Bar. Jimmy is such a fan of Milk Bar that he stocks their cookies in the Green Room at The Tonight Show.
After the announcements, things got serious. Chef Chang showed Jimmy how they make chicken wings at his restaurant Noodle Bar. He uses Korean chile paste, honey, habanero peppers, pure jalepeno powder and chopped jalepeno. Chef Chang then challenged Jimmy to a chicken wing eating contest. The first person to eat three of the other person's wings wings. Jimmy made his wings using the recipe from Anchor Bar in Buffalo, New York. Both men decided to make their wings really, really spicy. Chef Chang revealed that Chile oil as his secret ingredient.
Jimmy injected each wing with his special spicy puree. Chang then put chile oil on each wing. Chang kept telling Jimmy how extra spicy he made the wings and apologized in advance for the pain. They dove in, while Questlove judged. Well, mostly he just looked on in horror as they both began sweating from the heat. Yes, Jimmy ate all his wings. He must have an asbestos tongue -- even Chang was surprised that he could even talk after eating those wings. Take a look:
